
Fluffy Pumpkin Pancakes
I used to love eating pancakes as a kid. However, the pancakes I used to eat were not so healthy. I always added lots of maple syrup and sugar powder.
When I got older, I did not eat pancakes for a very long time, since they are packed with sugar. However, A couple of years ago, I started experimenting to make healthier pancakes. It was a big challenge; how could I replace the sugars, but still make my pancakes tasty?
Then I found out about the world of spices. I started using cinnamon, biscuit spices and pumpkin spices. Super tasty & healthy as it does not contain any sugar. Now I believe I make the best pancakes! By adding pumpkin to the batter, you will notice that the pancakes become fluffy with a nice spicy taste. Pumpkin is super healthy because it contains a lot of good nutrients, fiber, and it is very low in calories; a bonus if you want to lose some weight!
Ingredients:
- 1 egg
- 50g whole grain oats
- 50g (frozen) pumpkin
- 100 ml unsweetened coconut drink
- 1 tsp pumpkin spices OR biscuit spices
- 1 tsp cinnamon
- 1 tbsp coconut oil
- 100g (frozen) forest fruit
- 1 tbsp unsweetened coconut flakes
How to make it:
- Put the coconut drink, egg, pumpkin, oats & spices in the blender for 1 minute
- Heat the coconut oil in a frying pan
- Poor a big spoon of batter in the frying pan and bake until golden brown. Repeat this process until the batter is finished.
- Top off with the forest fruit and coconut flakes
