
Chickpea feta salad
I just love salads! There are so many variations to create a nice salad. But, this is by far my favorite one; the chickpea feta salad! The basics of this salad is arugula, tomato, cucumber and bell pepper. To make it more nutritious, and to transform it from an appetizer into a meal, I added several proteins/healthy fats. Roasted chickpeas, feta cheese and avocado. If I am starving, I add 150g of grilled chicken strips, and you will be filled up for a while, I promise!
Ingredients:
- 5 hands ful of arugula
- 1/3 cucumber
- 1 tomato
- 1/2 bell pepper
- 1/4 avocado
- 50g Greek feta cheese
- 100g chickpeas (from can)
- 1 tbsp olive oil
- 1 tbsp of balsamic dressing
- Pepper and salt
- (Optional: 150g of grilled chicken strips)
How to make it:
- Rinse the chickpeas with water, and roast them in a frying pan with a bit of oil for 2 min until golden brown
- Slice the cucumber, tomatoes, bell pepper and avocado
- Put the arugula on a plate and garnish it with all vegetables
- Top off with the roasted chickpeas and crumbled feta cheese
- Finish the salad with olive oil, balsamic vinegar, pepper and salt (and the chicken strips)
